In a blender, combine soy sauce, honey, oil, lime zest, lime juice, garlic, ginger, Sriracha and salt.
Blend until smooth. Combine chicken and marinade in a bag and seal tightly for 4 hours. Remove the chicken from the marinade and thread onto skewers, folding the pieces in half if they are long and thin. Be sure the grill is clean, then preheat to medium-high heat. Grill the chicken kebabs, covered, until golden brown and cooked through, turning skewers occasionally, for 10 to 15 minutes.
Pat scallops dry with a paper towel. Wrap one scallop in a half slice of bacon and secure with toothpick.
Drizzle olive oil over each scallop and season with pepper and salt. Place the scallops in a single layer on prepared baking sheet. Bake 12 to 15 minutes.
